Mushroom Gummy Recipe
- Lemon Tek method
INGREDIENTS:
1 packet Maestrodose DIY Gummy Mix
Freshly squeezed lemon juice (up to 3 TBSP, depends on quantity of mushrooms used)
Dried mushrooms
2 Tbsp sugar
2 drops food coloring (Optional: You can add food coloring to color-code your gummy batches)
4 dashes of your favourite bitters (Optional: this allows you to alter the flavor profile)
EQUIPMENT:
- Grinder
- Fine cheesecloth or nut milk bag
Stovetop waterbath (saucepan with some water at a gentle boil)
Heat resistant mixing container (Pyrex-style measuring cup works great)
Whisk (you can use a fork if you don't have a whisk)
Measuring spoons
Stopwatch (your phone works perfectly)
DIRECTIONS:
- Prepare a Lemon Juice Extraction (Lemon Tek):- Weigh out your desired dose of mushrooms. This recipe yields 21 gummies so determine your desired dose per gummy and multiply by 21.- Grind into a fine powder.- Add the mushroom powder to a small glass. Pour in enough freshly squeezed lemon juice to cover the mushroom powder. Give it a stir and let is sit for 20 mins (stirring every 5 mins).- Use a fine cheesecloth or nut milk bag to strain the lemon juice into a glass. Any strainer will work but the finer, the better.- Add liquid (water, juice or spirits) to the lemon juice extraction so that the final volume of liquid is 3 TBSP (1.5 oz or 45mL).
Mix: Combine the 3 TBSP of Lemon Tek solution, the package of gummy mix and a few dashes of bitters (if using) together in a Pyrex measuring cup. If you would like to add additional active ingredients (like herbal tinctures or oils) use the dose calculator to determine the volume of active to add. Give the contents a good whisking to combine.
Heat: Place the mixture in the stovetop waterbath, start your stopwatch and stir continuously.
Add sugar: At the one minute mark add 2 Tbsp of sugar and continue stirring for another 7 minutes.
Pour: At the 8 minute mark remove mixture from heat. Fill each chamber of the gummy mold up to the first shelf. Distribute the remaining mix evenly among the gummy cavities.
Set: Place the mold on a level surface in the freezer and allow to set for at least 2 hrs (or allow to set in refrigerator for at least 6 hours).

b) Works with a variety of edible gummy recipes. Think of it as a splash of citrus in your Margarita flavored gummy. Our mushroom gummy recipe uses a lemon juice extraction that pairs perfectly with the natural citrus flavor.
Why doesn't the mix include sugar?
We have left out the sugar to allow for flexibility in our recipes. You can use regular table sugar or substitute with another sweetener such as turbinado sugar (i.e. raw or cane sugar), maple syrup, or agave syrup to enhance the flavor profile of your gummies.
